The scent of apple cinnamon muffins fresh out of the oven, cooling on the rack; it doesn’t get better than that! I love to bake and am always looking for a great recipe. My boys love fresh-baked treats; this one is a favourite. I also have a great banana muffin recipe I’ll share next week.

The Recipe- Makes 12 Muffins

3 cups (750 ml) all-purpose flour

1½ cup (375 ml) white sugar

1 teaspoon (5 ml) salt

4 teaspoons (20 ml) baking powder

2 teaspoons (10 ml) ground cinnamon

⅔ cup (170 ml) Olive Oil

2 eggs

⅔ cup (170 ml) milk

4 Granny Smith apples, peeled, cored and chopped

PREPARATION

1. Preheat oven to 400°F (200°C). Grease top of pan. Drop paper liners into muffin cups.

2. In a large bowl, sift together flour, sugar, salt, baking powder, and cinnamon.

3. In a medium bowl, mix oil, eggs, and milk. Add to the dry ingredients. Fold in apples.

5. Fill muffin cups full. Drop the pan on the counter to remove any air bubbles.

6. Bake for 20 minutes or until a toothpick comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack.

Bake, freeze, and add them to your kids’ lunch boxes or as an after-school snack. Your family will love them. Let me know if you bake these and what you think.
